Masterclass applause!

What a fabulous weekend of foodie fun for all at the 2010 Brisbane Hilton Masterclass ( July 24 & 25).

Once again organiser Alison Alexander has trumped all with a spectacular line up of presenters. Best of all we all had a lot of fun including the presenters who got their rocks off to liven the crowd late on Sunday afternoon.





I've been a big fan of Masterclass for a while.  It brings chefs we would otherwise only read about to our shores to share their skills and insights and take home a little Queensland lurve.  It gives participants a chance to hone skills and pick up the sort of tips and cooking secrets that make good food memorable.

I learnt more than a few things -
  • From spice guru Ian Hemphill - use a pinch of cloves to bring up the basil note in yr spaghetti sauce. 
  • The very cool Canadian Susur Lee says - soak onion in ice water to get rid of the bitterness.
  • Brisbane's Russell Armstrong says a tablespoon of sour cream will stabilize mayo.
