Date and fig truffles recipe


Unlike most truffles, these delicious date and fig truffles are full of things that are good for you.

They would make an ideal treat for those times when nothing else will do.  Make them with organic honey and you've got an extra flavour burst. 


I've been enjoying trialling Capilano's Organic Honey because it tastes just like the honey I used to eat as a child.  I was a bit of a honey fiend and loved to make honey sandwiches.  My trick was to grab a slice of fresh, soft white bread, spread it liberally with butter and pile on the honey.  I would then fold the bread in half and squeeze the sides together so it formed a honey pocket in the middle.  This is best attempted by a 10 year old when their grandmother is not in the kitchen!

These date and fig truffles were exceptionally easy to make.  I rolled them with my daughter who had a hang over at the time and so didn't eat too many in the making. Bonus!


Date and fig truffles


Ingredients
2 cups pitted dried dates, chopped
1 cup dried figs, stalks removed, chopped
1 tablespoon finely grated orange rind
1 cup blanched almonds, toasted
2 tablespoon Capilano Honey
1/2 teaspoon mixed spice
1/3 cup desiccated coconut

Method

    1 Combine all ingredients (except for coconut) in a large bowl. Using a food processor, process mixture in batches until a paste forms. With damp hands, roll tablespoonfuls of mixture into balls.

    2 Roll balls in coconut. Store in an airtight container in the refrigerator.
